We source our grains from local mills, selecting heritage varieties that bring character to every bite. The crust crackles when you break it open, releasing steam and aroma in equal measure. The Art of the Roast
Our coffee journey begins thousands of miles away, in the highland farms of Ethiopia, Colombia, and Guatemala. We work directly with small-hold farmers who tend their coffee cherries with generational wisdom, picking only the ripest fruit by hand. These green beans arrive at our roastery, where the real alchemy begins.
We roast in small batches, coaxing out the particular character of each origin. Ethiopian Yirgacheffe brings floral jasmine notes; Colombian Huila offers caramel depth; Guatemalan Antigua delivers chocolate and spice. Our head roaster listens to the beans -- literally -- timing the first and second crack by ear, adjusting temperature by intuition refined over decades. The result is a cup that tells a story of its origin, its journey, and the care that carried it to your table.
Seasonal Sweetness
As the seasons turn, so does our pastry case. Spring brings lavender-lemon cakes with cream cheese frosting, their petals scattered like confetti.
