Harbour of Ulleung
East Sea, Republic of Korea · 820 m
Volcanic pumice and kelp-wreathed cliffs. Expressive of white peach, toasted barley, and the faintest whisper of sea-spray iodine.
Specimen No. III
Okinoshima Reach
Southern Archipelago, Japan · 1,120 m
Volcanic terraces above a strait swept by typhoon ghosts. Persimmon jam, roasted chestnut, and a long finish of camellia petal.
Chapter III
The Depths
Each bean is a sounding-line cast into the dark.
We roast slowly, as though lowering lanterns into a drowned library.
A drum rotates. Chaff exhales its tobacco-sweet breath.
Moisture becomes memory. Sugars turn to caramel, then to char that tastes of chocolate.
We listen for the first crack — a distant gunshot through fathoms of green.
At second crack we cease, before the oils bead like mercury.
What remains is the voyage, condensed — the crossing of hemispheres,
folded twice into a parchment sack bearing our verdigris seal.
Descend, then, and pour.
